Sugar Cookie Truffles

15 baked sugar cookies – 1 (8-oz.) block cream cheese, softened to room temperature – 1 tsp. pure vanilla extract – Pinch kosher salt – 2 tsp. coconut oil – 1 1/4 c. white chocolate chips – Christmas sprinkles, for garnish
Add cream cheese.
Add 1 tsp. vanilla.
Mix well.
Add 2 tsp. coconut oil into bowl with white chocolate chips. Microwave on low for 30 second intervals, stirring in between.
On parchment paper-lined baking sheet, roll mixture in balls and place on sheet.
Dip cookie balls into melted white chocolate and place on baking sheet.
Garnish with sprinkles.
