Chocolate Peppermint Cookies

1 c. sugar –
1/2 c. salted butter, softened –
1 large egg, at room temperature –
1/2 c. milk, at room temperature –
1 1/4 tsp. baking powder –
1 1/2 c. all-purpose flour –
1/4 c. cocoa
This recipe works best using a hand mixer.
Preheat oven to 375 degrees.
In a large bowl add 1 cup sugar and 1/2 cup butter.
Add 1/2 cup milk at room temperature to butter and sugar mixture.
Add 1 cup egg at room temperature.
In a separate bowl, add baking powder, flour and cocoa.
Whisk dry ingredients together.
Add dry ingredients to wet ingredients. Blend well.
Scrape bowl to make sure all is mixed.
Spoon dough onto parchment paper-lined baking sheet
Bake for 6-8 minutes, or until edges are set and the centers look mostly done.
Check to make sure cookies are done. If wet batter is on the fork, the cookies are not yet baked.
