Chocolate Peppermint Cookies

  • 1 c. sugar – 1/2 c. salted butter, softened – 1 large egg, at room temperature – 1/2 c. milk, at room temperature – 1 1/4 tsp. baking powder – 1 1/2 c. all-purpose flour – 1/4 c. cocoa

  • This recipe works best using a hand mixer.

  • Preheat oven to 375 degrees.

  • In a large bowl add 1 cup sugar and 1/2 cup butter.

  • Mix until smooth.

  • Add 1/2 cup milk at room temperature to butter and sugar mixture.

  • Add 1 cup egg at room temperature.

  • In a separate bowl, add baking powder, flour and cocoa.

  • Whisk dry ingredients together.

  • Add dry ingredients to wet ingredients. Blend well.

  • Scrape bowl to make sure all is mixed.

  • Spoon dough onto parchment paper-lined baking sheet

  • Bake for 6-8 minutes, or until edges are set and the centers look mostly done.

  • Check to make sure cookies are done. If wet batter is on the fork, the cookies are not yet baked.

  • Let cool.
